2004 Bollinger la Grande Annee Brut
RP93
HKD $950.00
"All that having been noted, it is Kaufmann and then-director Ghislain de Montgolfier who can take responsibility for the success that is Bollinger’s 2004 Brut Grande Annee, a bottling that, in marrying the restraint associated with young wines from this house with that of a relatively cool and copious but ultimately fascinating vintage, has rendered a work of subtle intrigue and refinement that will merit a dozen or more years’ attention. Quite pale in color and with unexpectedly green-gold shimmering, this two-thirds Pinot Noir cuvee displays alluringly silken texture and refinement of mousse as well as delicacy. Fresh white peach, yellow tomato, lime, and rhubarb offer subtly tart, brightly juicy succulence, and a mingling of chalk and sweet-saline oyster liquor serves for saliva-inducement in a long finish tinged with lightly toasted grains and nuts..." 2003 Moet & Chandon, Dom Perignon Rose
RP94
HKD $2,850.00
"Moet’s 2003 Brut Rose Dom Perignon exhibits both richness and robustness reflecting its torrid vintage, yet manages to stint neither on primary juiciness nor transparency to nuance; nor does it come off as at all heavy. Lightly cooked ripe strawberry and fig infused with rose hip, licorice, Ceylon tea, heliotrope and leather inform a delightfully forward nose and lush, effusively fruity palate. A tart and seedy edge to the strawberry serves for invigoration; and lobster shell reduction serves for mouthwatering salinity and somehow downright sweet animal savor. There is a hint of tannin, but it is fine-grained and suggestive of structural support. A long, seductively rich finish manages to harbor not just the immediately aforementioned virtues, but also a sense of transparency to floral and tea-like nuances and to virtually shimmering stoniness..." 2002 Delamotte Blanc de Blancs
RP94
HKD $760.00
"...their 2002 Brut Blanc de Blancs represents a rare bird indeed; and from its being on the market now (in the form of a late-2012 disgorgement) you can recognize how little hurry the house is to release their vintage bottling. Already in the nose, hints of walnut and pistachio oils point toward the bittersweet, subtly smoky, faintly toasty aspect of a bottling that at the same time harbors pure and succulent apple and pear wreathed in heliotrope and orange blossom inner-mouth perfume. A vividly scallop-like and salivary gland-milking sweet- saline, mineral-animal savor opens the floodgates of the salivary glands, and for some of us, perhaps even the tear ducts. This finishes with extraordinary persistence and alliance of richness with levity. Especially considering that, in a vintage of this quality, Salon was not giving up their fruit to help inform this vintage Delamotte, it represents an outstanding accomplishment; and what´s more, a quite stunning value for its genre..." - Robert Parker

2009 Rieussec
NM97
HKD $627.00
"The 2009 Rieussec is a blend of 84% Semillon (relatively low), 12% Sauvignon Blanc and 4% Muscadelle picked between 17 September and 15 October over four pickings. It has a rich and powerful bouquet that overshadows the 2010, decadent ripe quince, peach and dried honey scents, a dab of beeswax developing with time. The palate is wonderfully balanced with botrytis-rich fruit, a multilayered and opulent Rieussec that somehow maintains quite brilliant balance towards the minerally finish. This is one of the great wines from the estate in the modern age."

2007 d'Yquem
RP97
HKD $2,850.00
"Tasted single blind against its peers. Under blind conditions, the Yquem 2007 shines like a diamond. Nevertheless, it is initially rather taciturn on the nose, eventually opening up beautifully with touches of lemon curd, Mirabelle, and clear honey. The palate is medium-bodied with very fine definition and there seems to be a great deal of energy and vigor dispensed for your pleasure. There is such race and nervosity, and then that finish just purrs with harmony and focus. This Yquem feels just so alive and vivacious, yet there is an effortless quality here that is unmatched by its peers. Tasted January 2011."

2010 d'Yquem
RP96-98
HKD $4,750.00
"Picked predominantly over 10 days from October 14, the 2010 d’Yquem has 141gms/L residual sugar and pH 3.80. It is a slow-burner, the nose understated at first but unfurling with each passing moment with subtle scents of freshly sliced apricots, Clementine, clear honey and white flowers. There is an underlying minerality that really defines this bouquet. The palate is similar to the nose, revealing hidden facets with almost each swirl of the glass – orange blossom, limestone, white peach and honeysuckle. This is such a precise d’Yquem; it is after you have swallowed the wine that one comprehends just how brilliant it is."
