Iberian Ham 伊比利亞火腿屬高級食材，被列為歐洲九大傳奇食材之一，能吸引高消費群，而且它產量少，
每年全西班牙生產約五十萬隻火腿，而且飼料橡實產量有限，故最高級別 Jamon de Bellota (*在屠宰前純吃橡實)
更為珍貴。現時在香港配上葡萄酒潮流，在餐桌上葡萄酒配火腿亦是最佳配搭。伊比利亞火腿亦是健康食材，
它低熱量 (50千卡。/ 50克, 有豐富的不飽和脂肪 (54％的油酸))，有助降低膽固醇水平，含有豐富的維生素 E，
抗氧化劑，維生素 B1，維生素 B6，維生素 B12，葉酸，而且含高蛋白質（100克= 43克蛋白質）

蒙特斯奧在1997年正式擴展至伊比利亞火腿產品線，設廠於(Extremadura)埃斯特雷馬杜拉。
此區位於西南部，東面和南面臨地中海，大部分地區都屬地中海氣候區，生態系統為基礎的軟木、
橡實樹林和天然牧場，豬隻生長在年平均氣溫攝氏 16 度的埃斯特雷馬杜拉，海拔五百一十一米的山脈。
在埃斯特雷馬杜拉生產的產品是最高品質的，此地擁有完美的氣候條件，能取得最好的原料，
生產最高質量的火腿。豬隻於每年的十月一日至十二月十五日進入山區，最少逗留60天。
十二月十五日至四月十五日便會屠宰豬隻。被屠宰的豬隻最少年齡為10個月，最低體重為117公斤。
